Garden Fresh Pico De Gallo Without Cilantro

Mmmm I love a good dish that can come right out of the summer garden. Our garden is overflowing in tomatoes right now. Pico De Gallo is one of those dishes that can come right out of the garden.

The only issue is Pico De Gallo has cilantro. I am one of those people that just can not handle the taste of cilantro.

Cilantro is often referred to as Mexican parsley so I discided to try parsley as an alternative for cilantro. The two are so close in appearance but parsley doesn’t have that soapy taste I dislike.

This Pico De Gallo without cilantro is the perfect alternative when I want something close to this classic Mexican salsa. This garden-fresh salsa is a Mexican classic with a twist so anyone can enjoy it.

This recipe is adopted from the book Not Just Tacos A Journey Into the World of Authentic Latin American Cuisine.

Make your own Garden Fresh Pico De Gallo Without Cilantro

  • 2 med yellow onion
  • 1 large red onion
  • 12 Roma tomatoes
  • 2 cups parsley leaves
  • 2 to 3 jalapenos
  • 1 lime
  • Salt

Try this Pico De Gallo Without Cilantro

Slice jalapenos in half and scoop out seeds. Then dice finely to distribute the spice throughout the entire dish. If you have a family that loves a little fire you can leave the chunks larger.

Dice equal parts onion and tomatoes into small chunks. I am not too picky about keeping them uniform in size after all perfection is not necessary.

Roughly chop the parsley.

Mix everything in a large bowl.

Lightly squeeze the lime over your vegetables, sprinkle a pinch of salt and mix one last time. I like to substitute lemon for this do to my allergy to lime.

I just love how easier it is to make changes to recipes to fit my needs as I did in my Cast Iron Skillet Fajitas.

Serve fresh with tortilla chips. When we can get across town I love to snag the fresh chips from the local Mexican grocery store and heat them.

Ways to use pico de Gallo

Save

Classic Salsa: Serve it as a classic Mexican salsa with tortilla chips for dipping.

Taco or Burrito Filling: Use it as a fresh and zesty topping for tacos, burritos, or quesadillas.

Guacamole Enhancement: Mix it into mashed avocados to create a chunky guacamole with an extra burst of flavor.

Omelette or Scrambled Eggs: Add a spoonful of pico de gallo to your omelette or scrambled eggs for a pop of color and flavor.

Grilled Meat or Seafood Topping: Spoon it over grilled chicken, fish, or shrimp for a bright and tangy topping.

Burger or Sandwich Topping: Use it as a fresh topping for burgers, sandwiches, or wraps for added crunch and flavor.

Baked Potato Topping: Top a baked potato with pico de gallo for a fresh and vibrant twist.

Salad Ingredient: Add it to salads for a burst of flavor. It pairs particularly well with salads featuring avocado, corn, or black beans.

Ceviche Component: Mix it with diced seafood (like shrimp or white fish), lime juice, and cilantro for a refreshing ceviche.

Chili Enhancement: Stir it into a pot of chili for a burst of freshness and color.

Stuffed Bell Peppers or Tomatoes: Use it as a filling for stuffed bell peppers or tomatoes for a burst of flavor.

Sour Cream Dip: Mix it with sour cream for a creamy and zesty dip.

Baked or Grilled Cheese Topping: Use it as a topping for baked or grilled cheese for a fresh and tangy contrast.

Salsa Rice: Mix it with cooked rice for a quick and flavorful side dish.

This Pico De Gallo makes a great topping for our favorite Instant Pot Fajitas when we don’t want the house up cooking in the summer.
