This pregnancy has been all about breakfast foods. French toast, sausage, bacon, waffles, pancakes, we have had them all with cheeseburgers in the mix.

Comfort foods that made me happy while pregnant, recovering from being majorly injured in an accident, and grieving the loss of my father. I have been cooking at home and sneaking off to the local IHOP.  This Simple Belgium Waffle Recipe is easy enough anyone can make them at home.

What are Belgium waffles?

Belgium waffles are crispier and have deeper pockets perfect for filling with syrups and other toppings. Belgium waffles are often made with yeast for a crispier texture or eggs for a fluffier texture. To make Belgium waffles you need a Belgium waffle maker with nice deep groves.

The best part of Belgium waffles?

The best thing about Belgium Waffles is the deep pockets that can hold large amounts of toppings. We love to use real maple syrup, fresh fruit, homemade whipped cream, fresh homemade butter or any of our homemade syrups. A nice flavored cream cheese can be frozen and stashed spread on your fresh waffles. The options are endless.

Ingredients for simple Belgium waffles

:: 3 large eggs, separated

:: 2 tablespoons sugar

:: 2 ¼ cups all-purpose flour

:: 1 tablespoon baking powder

:: ½ teaspoon salt

:: 1 teaspoon ground cinnamon

:: 2 cups milk

:: ¼ cup vegetable oil

:: 2 teaspoons vanilla extract

How to make Belgium Waffles

:: Using a stand or handheld mixer, beat egg whites until stiff peaks form, adding in sugar towards the end.

:: Combine remaining ingredients (including egg yolks) in a separate bowl and stir together, making sure to not over-stir. Fold in the whipped egg whites, until just incorporated.

:: Cook in waffle iron according to waffle iron instructions.

:: Top as desired, with whipped topping, nuts, fruit, berries, syrup, etc.
